A sweet tooth accomplishment


My hubby and I were craving chocolate chip cookies one night recently and came up with this master creation:

Choco Chip and/or Butterscotch Molasses Flax Cookies

2 1/4 C unbleached all-purpose flour
3/4 C vegan butter
1/4 C blackstrap molasses (optional)
1/4 molasses
1/2 maple syrup (or other sweetener)
1/2 C ground flax seeds
1 tsp vanilla extract
1 tsp baking soda
1 tsp salt
1 C chocolate chips (we use dark chocolate)
1/2 C butterscotch morsels (optional)
Almond milk (or other kind) as thinner

Optional: Add 3/4 C almond butter

Directions:

Preheat oven to 375 degrees.
In a mixing bowl, mix butter, molasses, sweetener, and vanilla till whipped. Mix in the rest of the dry ingredients and add a little bit of milk at a time to get it to the cookie batter consistency. Spoon onto a cookie sheet (we have a giant cast iron pizza sheet that works great). Bake for approximately 10 minutes or until done.
This is a very forgiving recipe and you can switch it up to your likin'! My hubby likes more sweetener than he does molasses, so sometimes I use less molasses and more maple syrup.

This makes big, very moist, fluffy cookies!

Makes: Approx. a dozen fluffy cookies
Preparation time: 10 mins. or less
Cooking time: Approx. 10 mins.
